A funfetti cake will bring loads of "fun" to your party. Not only does it sound like fun eating it, but making it sounds even better.

How Do You Make a Funfetti Cake?

The term "funfetti cake" refers to a fluffy white cake with sprinkles added to the batter. This light and fluffy cake is made with a combination of butter (for flavor) and oil (for texture and moisture). 

If you prefer something more standard, then you can bake any flavour sponge you like.

Decorating Your Pool Party Jelly Cake!

This is where the fun begins. If you want the traditional pool party theme, then a couple of decorative umbrellas and a few jelly babies will do the trick.

To make towels, cut the rainbow sour straps into four equal pieces. Cut short ends off each piece to make a fringe with a sharp knife. Place the towels all around the pool. Place any flat biscuit in the pool as a li-lo. Add a few strawberry sour or sweet straw pieces in as pool noodles and add ring lollies in pool floaties. A few round hard sweets can present a beach ball. Tiny Teddy biscuits can be added in and around the pool with a small bit of plain icing to make them stick. These ideas can go a long way when looking for inspiration to decorate your jelly cake!

PREPARATION

  • 1 Prepare cake mix according to packet instructions. Bake in a 20 cm prepared cake pan and allow to cool. Prepare Aeroplane Original Berry Blue Jelly according to pack instructions. Cover and refrigerate until set firm (2-3 hours).
  • 2 Place cake onto a serving plate and spread sides and top of cake with icing provided in pack. Press finger biscuits evenly around side of cake, trimming if necessary to create a pool wall; leave about 5 cm opening for ladder. Mash set jelly with fork and spoon onto cake to represent water.
  • 3 Build a ladder with finger biscuits and icing and place in opening. Add assorted lollies to create party pool look and feel. Keep cake refrigerated until ready to serve.
