Indulge those island fantasies with this tropical treat.
No. of Serves:
- 450 ml can coconut milk
- 2 cm cube ginger, diced
- 1 6cm stalk of lemongrass, chopped
- 1 x 85g packet Aeroplane Create a Jelly
Combine coconut milk, ginger and lemongrass in a small saucepan, and bring to the boil. Reduce heat to low and allow to gently simmer for 10 minutes. Remove and strain coconut milk, discarding ginger and lemongrass.
Once drained, combine with Aeroplane Create-a-Jelly crystals, whisking until dissolved.
Pour into 4 serving glasses and refrigerate until firm. Jelly will separate into layers whilst setting.
Top with toasted coconut just prior to serving
