Lime and Coconut Jellies

Ingredients

  • 1 x 85g packet Aeroplane Original Lime Jelly
  • 200 ml boiling water
  • 1 cup (125ml) lite coconut milk
  • 1/2 250 ml honey dew melon
  • Toasted coconut to serve (optional)

Method

Combine the Aeroplane Jelly Lime Jelly Crystals with boiling water and whisk until dissolved. Allow to cool to an egg white consistency. Gradually add in coconut milk and keep whisking until combined.

Pour coconut jelly into 4 moulds, or 4 serving glasses and allow to set.

Using a melon baller, scoop out melon flesh (or alternately dice). When jelly is set, turn out to serve, or just top in the glasses with melon balls. Sprinkle with toasted coconut to serve.

Hints

Serve with lemon or lime sorbet.
