Attempting to use a baked crust (particularly one with less butter) implies your filling will seep into the crust making it soggy.

Mixing the filling for longer than the recipe says you should

Never mix the filling for longer than the recipe says you should. This will result in a super-soft cheesecake that doesn't set properly at all.

Using cold cream cheese

Before combining the cream cheese, it must be at room temperature. When you try to incorporate cold cream cheese into the filling, you'll notice little lumps.

Speeding up the chill

  • 1 Line base and sides of a slice pan (16 cm x 25 cm x 3 cm) with baking paper. Place crushed biscuits in a medium bowl, add melted butter and stir to combine well. Spoon crumb mixture onto the base of prepared pan and using the back of a spoon press biscuit crumb evenly over base. Refrigerate while making filling.
  • 2 In a small bowl combine Aeroplane Lite Mango Passionfruit Flavoured Jelly crystals and ½ cup (125 mL) boiling water, stir until dissolved. Set aside.
  • 3 Using an electric mixer beat cream cheese and sugar on medium speed until smooth, add cream and beat for a further minute or until combined. Pour cooled passionfruit jelly mixture into cream cheese mixture and beat for 1 minute or until smooth, thick and creamy. Fold through ½ of the passionfruit pulp.
  • 4 Using an electric mixer beat cream cheese and sugar on medium speed until smooth, add cream and beat for a further minute or until combined. Pour cooled Mango Passionfruit jelly mixture into cream cheese mixture and beat for 1 minute or until smooth, thick and creamy. Fold through ½ of the passionfruit pulp.
  • 5 Pour cheesecake mixture over biscuit base then randomly spoon remaining passionfruit pulp over and using the tip of a knife pull the pulp through the cheesecake.
  • 6 Refrigerate for 1-2 hours until set. To serve cut into slices.
