Nostalgic toffee apples flavours are back on the table with these simple no bake treats.
- 1 Lightly grease and line 12 x ⅓ cup (80mL) muffin pan with crossed over 8cm long, 1cm wide baking paper strips.
- 2 Process biscuits to a rough crumb add the butter and combine well. Divide crumb mix between the 12 muffin cups and press down firmly and evenly. Refrigerate.
- 3 Beat cream cheese and cream with an electric mixer until smooth. Combine green apple jelly crystals and ½ cup boiling water, stirring until dissolved. (if necessary, microwave jelly mix for 20 second intervals to ensure gelatine and sugar is dissolved well). Then beat into cream cheese mixture. Spoon ¼ cup of cream cheese mix over bases allowing approximately ½ cm space for the jelly top. Refrigerate until set.
- 4 Make up the strawberry jelly with 100mL less water. Refrigerate for 1 – ½ hours or until the consistency of a thick syrup. Spoon approximately 1½ tablespoons of strawberry jelly over cream cheese and return to refrigerator until set. Serve, decorated with a fresh mint leaf.
