PREPARATION

  • 1 Combine biscuits and walnuts in a bowl.
  • 2 In a high-powered blender, place all ingredients for the ice-cream and blend on HIGH speed until smooth (1-2 minutes).
  • 3 Pour mixture into rubber ice-cube trays or moulds (multiple) and freeze for 2 hours or until set firm.
  • 4 Remove frozen mixture from moulds and return to blender. Blend on HIGH speed until smooth (1-2 minutes). Transfer mixture into a container or bowl and use a spatula to mix the ice-cream until combined and smooth in texture, as it might be slightly crumbly. It will easily come together with minimal effort.
  • 5 Alternatively, transfer blended mixture into an ice-cream maker and follow manufacturer instructions.
  • 6 Enjoy ice-cream immediately, or cover and keep frozen until ready to eat. Remove from freezer and let sit at room temperature for 10-15 minutes to soften before scooping.
  • 7 Top with crumbled salted pretzels and a pinch of sea salt flakes before serving.
