  • 1 Combine raspberry jelly crystals and ¼ cup (60 mL) boiling water. Microwave for 30 seconds and stir well to dissolve. Add ½ cup raspberries and use a fork to roughly mash. Set aside until ready to serve.
  • 2 Use the remaining jelly to make jelly cubes. For each flavour, prepare jelly crystals with only ½ cup (125 ml) of boiling water. Microwave in 30 second bursts and stir until well dissolved. Pour each flavour into their own rubber ice-cube tray, evenly dividing the mix. Refrigerate for at least 1 hour, or until set.
  • 3 Using an electric mixer, whip cream and icing sugar together until firm. Cover and refrigerate until ready to serve.
  • 4 Assemble just before serving.
    1. Place custard in a serving bowl.
    2. Place whipped cream in a serving bowl and add some raspberry jelly mix. Mix to create a ripple effect. If the jelly mix has set, add some boiling water and stir to loosen.
    3. To remove the jelly cubes, loosen edges with a knife and sit the tray in warm water until loose. Gently turn out and plate in tall serving glasses.
    4. Decoratively arrange all ingredients on your serving platter or board. Get creative!
