Lime jelly slice crust is made with a few simple ingredients that many of us already have at home: Biscuits and butter. The key to making the perfect biscuit base is the correct crumb to butter ratio. 100g of Butter t 150g of plain sweet biscuits will help you achieve the perfect crust that's not too soft, and not too crumbly.

There are two popular ways of making a biscuit crumb. Get a rolling pin and a zip bag and bash those biscuits into a fine crumb, or put them into a food processor and give them a whiz. Either way, make sure that your crumbs are even with no visible large pieces left. Once you've got your crumbs, melt your butter in the microwave or on the stove.

Be sure to press your crumb layer firmly and evenly in your tin. This takes some patience and practice but is worth the effort when you see the crisp, clean lines of your lime dessert. Remember to let your crust cool, and butter harden before filling to avoid a soggy base.

PREPARATION

  • 1 Line a (25cm x 16cm x 3cm) slice pan with baking paper. Combine crushed biscuits and melted butter, stir to combine well. Press biscuit crumb evenly over base. Refrigerate while making filling.
  • 2 In a bowl combine boiling water and gelatine, stirring well until gelatine is completely dissolved, then stir through the condensed milk. Set aside to cool to room temperature. Pour mixture over the biscuit base and refrigerate until set (1-2 hours).
  • 3 Prepare Lime Jelly according to packet instructions, using 100mL less cold water than directed. Allow to cool to room temperature. Gently pour jelly over set filling and refrigerate for 1-2 hours or until jelly is set. Slice to serve.
