What is a Passionfruit Cheesecake?

Passionfruit cheesecake is a popular dessert in Australia. Traditionally, it is made with passionfruit, cream cheese and eggs. The mixture is then baked in a pie crust or on a shortbread cookie base - but when following our recipe, you won't have to worry about baking or eggs at all!

Why are Passionfruit Cheesecakes Popular in Australia?

There are two main reasons why passionfruit slices are so popular in Australia. First, passionfruit is a native fruit to Australia. Second, the climate in Australia is perfect for growing passionfruit and enjoying cool, sweet treats like these! The hot weather and high humidity help the fruit to ripen quickly, which means that they are often used in desserts like cheesecakes.

4 Mistakes to Avoid When Making Our No-bake Cheesecake

Baking the crust

The term "no-bake" really means that it involves no baking. Because no-bake crusts are high in fat, attempting to make a crumb crust for a no-bake cheesecake will result in a soggy crust. Attempting to use a baked crust (particularly one with less butter) implies your filling will seep into the crust making it soggy.

Mixing the filling for longer than the recipe says you should

Never mix the filling for longer than the recipe says you should. This will result in a super-soft cheesecake that doesn't set properly at all.

Using cold cream cheese

Before combining the cream cheese, it must be at room temperature. When you try to incorporate cold cream cheese into the filling, you'll notice little lumps.

Speeding up the chill

To form sliceable portions, the filling must be chilled for at least four hours, but ideally overnight. The cheesecake will turn out tough to eat if frozen.

PREPARATION

  • 1 Line base of a slice pan (16 cm x 25 cm x 3 cm) with baking paper. Place crushed biscuits in a medium bowl, add melted butter and stir to combine well. Spoon crumb mixture onto the base of prepared pan and using the back of a spoon press biscuit crumb evenly over base. Refrigerate for 30 minutes or freeze for 10 minutes while making filling.
  • 2 In a small bowl combine Aeroplane Original Passionfruit Flavoured Jelly crystals and ½ cup (125 mL) boiling water, stir until dissolved. Set aside.
  • 3 Using an electric mixer beat cream cheese and sugar on medium speed until smooth, add cream and beat for a further minute or until combined. Pour cooled passionfruit jelly mixture into cream cheese mixture and beat for 1 minute or until smooth, thick and creamy. Fold through ½ of the passionfruit pulp.
  • 4 Pour cheesecake mixture over biscuit base then randomly spoon remaining passionfruit pulp over and using the tip of a knife pull the pulp through the cheesecake.
  • 5 Refrigerate for 1-2 hours until set. To serve cut into slices.
