Passionfruit Cheesecake Slice

The fresh flavours of passionfruit marry perfectly in this creamy cheesecake slice.

  • 1 Line base of a slice pan (16 cm x 25 cm x 3 cm) with baking paper. Place crushed biscuits in a medium bowl, add melted butter and stir to combine well. Spoon crumb mixture onto the base of prepared pan and using the back of a spoon press biscuit crumb evenly over base. Refrigerate for 30 minutes or freeze for 10 minutes while making filling.
  • 2 In a small bowl combine Aeroplane Original Passionfruit Flavoured Jelly crystals and ½ cup (125 mL) boiling water, stir until dissolved. Set aside.
  • 3 Using an electric mixer beat cream cheese and sugar on medium speed until smooth, add cream and beat for a further minute or until combined. Pour cooled passionfruit jelly mixture into cream cheese mixture and beat for 1 minute or until smooth, thick and creamy. Fold through ½ of the passionfruit pulp.
  • 4 Pour cheesecake mixture over biscuit base then randomly spoon remaining passionfruit pulp over and using the tip of a knife pull the pulp through the cheesecake.
  • 5 Refrigerate for 1-2 hours until set. To serve cut into slices.
