You Will Need:

1 x 540 g packet vanilla cake mix

1 x 400 g store bought vanilla frosting

1 x 85 g Aeroplane Original Berry Blue Flavour Jelly

5 x butter nut snaps, finely crushed for sand

1 x 350 g packet Vanilla crème filled waffle rolls

Decorating: Mermaid pearls Mermaid tails

How to Make It: 

  1. 1 Prepare cake mix as per instructions and bake in a greased and lined a 22 cm cake pan as per packet directions. Allow to cool completely.
  2. 2 Prepare the jelly together, with 1 cup of boiling water and 1 cup of iced water. Set aside until almost set, but still pourable.
  3. 3 Maintaining a 2 cm edge, score a semi-circle and carve out a 3cm deep portion of the cake. Place this on the other side of the cake cut side up and attach with a little of the vanilla frosting, creating a “sand dune”.
  4. 4 Generously cover the cake with vanilla frosting, and line the ocean side with the frosting sealing well.
  5. 5 Sprinkle the cake or biscuit sand over the sand dune. Position the mermaids tail or tails in the soon to be ocean. Gently pour the almost set jelly into the cake cavity until almost full. Refrigerate the remaining jelly to set firm.
  6. 6 Attach the vanilla wafers around the outside of the cake. Position the palm tree on the sand dune.
